Like its famous cousins of Sauternes or Barsac, the Grand Enclos du Château de Cérons liquoreux is a golden wine. It benefits from the magic of the Ciron, this small river tributary of the Garonne which allows the "noble rot" or Botrytis cinerea to develop. In order for the magic to work, the fungus has to set in when the grapes are ripe. The berries are then picked by hand in successive passes because only those berries that are ready should be harvested.

About the Estate
The vineyard is owned and managed by Giorgio Cavanna, an Italian from Tuscany with family roots in winemaking, and one of the greatest names in oenology, Patrick Léon. Their long association and friendship helps them dedicate their full attention to this Graves terroir.
