Tasting Notes: With a little bottle age, this Sauvignon Blanc and Viognier blend has softened and deepened in all the right ways. Aromas of dried white peach, preserved lemon, and a hint of beeswax lead the nose, while the palate has gained texture and quiet complexity. The once-bright minerality has mellowed into something rounder and more layered. Still fresh, but more contemplative than it once was, it’s a beautiful match for richer seafood, aged cheeses, or simply a slower meal.
