Power meets poise in this standout premier cru. From old vines on stony, well-drained soils, “Les Cailles” delivers a beautifully concentrated, age-worthy Pinot Noir with grace to match its structure.
Tasting Notes: Deep ruby in color, this Premier Cru Pinot Noir opens with aromas of red cherry and blackcurrant layered over subtle spice. On the palate, a firm core of fine-grained tannins supports vivid fruit and hints of earth and vanilla. There’s tension and elegance in equal measure, thanks to six days of cold maceration, native yeast fermentation, and 18 months in one-third new oak barrels. The result is a full-bodied, complex wine with natural freshness and a long, graceful finish. Enjoy with roasted duck, mushroom risotto, or aged cheeses, or cellar confidently for up to 25 years.
Varietals: 100% Pinot Noir
About the Estate: Maison Saint Vivant is a special project from Antoine Gille, with very limited production. In 1851, it was written that the Gille family had already been present in Comblanchien since 1570. Antoine's grandfather built the estate that exists today. His parents dramatically expanded the vineyards, and now Antoine and his family have taken over. The Gille family philosophy is that winemaking is not a job, but a passion guided by tradition and innovation. The Gille family places a special reverence to their vineyards - No hazardous materials are used in cultivation and no products used in excess. Their goal is to preserve the myriad of yeasts on the berries, which guarantees the expression of the different climates through natural fermentation & little to no human intervention.
