Complexity builds with air, revealing earthy undertones and a touch of oak from 18 months of barrel aging. Ideal with grilled meat, sauced dishes, aged cheeses, or even spicy cuisine. Varietals: 100% Pinot Noir
About the Estate: Maison Saint Vivant is a special project from Antoine Gille, with very limited production. In 1851, it was written that the Gille family had already been present in Comblanchien since 1570. Antoine's grandfather built the estate that exists today. His parents dramatically expanded the vineyards, and now Antoine and his family have taken over. The Gille family philosophy is that winemaking is not a job, but a passion guided by tradition and innovation. The Gille family places a special reverence to their vineyards - No hazardous materials are used in cultivation and no products used in excess. Their goal is to preserve the myriad of yeasts on the berries, which guarantees the expression of the different climates through natural fermentation & little to no human intervention.
