Earthy, powerful, and kissed by oak, this Côte de Nuits Pinot Noir brings structure and spice perfect for your next roast chicken or mushroom-heavy dinner.
Tasting Notes: Ruby red with bright flashes and a garnet rim, this Pinot opens with aromas of red berries and blackcurrant. The palate is powerful yet smooth, with layers of spice and a subtle touch of vanilla from oak aging. The finish is long and structured, making it a great match for grilled meats, rich sauces, or even spiced dishes. With some bottle age, it becomes a beautiful partner for ripened cheeses or white meats.
Varietals: 100% Pinot Noir
About the Estate: Maison Saint Vivant is a special project from Antoine Gille, with very limited production. In 1851, it was written that the Gille family had already been present in Comblanchien since 1570. Antoine's grandfather built the estate that exists today. His parents dramatically expanded the vineyards, and now Antoine and his family have taken over. The Gille family philosophy is that winemaking is not a job, but a passion guided by tradition and innovation. The Gille family places a special reverence to their vineyards - No hazardous materials are used in cultivation and no products used in excess. Their goal is to preserve the myriad of yeasts on the berries, which guarantees the expression of the different climates through natural fermentation & little to no human intervention.
