When the meal calls for something graceful yet bold, this Clairette-led blend from Châteauneuf-du-Pape delivers. Think citrus, wildflowers, and honeyed pears. A perfect match for crab cakes, chèvre, or conversation that lingers past dessert.
Tasting Notes: Bright pale yellow with green reflections, this wine opens with an inviting nose of white flowers, honey, candied citrus, and a hint of marshmallow. The palate is full and refreshing, offering layered flavors of pear in syrup, citrus zest, and soft floral notes over a backbone of gentle minerality. The finish is long and elegant, balancing richness with freshness in a way that makes it both food-friendly and a pleasure on its own.
Varietals: 40% Clairette, 30% Bourboulenc, 15% Grenache Blanc, 15% Roussanne
About the Estate: In the old times the Boisson family had two jobs at once: they were both wine-makers and black-smiths. The name of their estate comes from this second profession, because the nails used to fix the shoe under the horse's foot are called, in our regional language, "caboche". At the time the word became the nickname for the Boisson family. A long time before all this, their vineyard belonged to the Chambellan family. In 1777, the Boisson's ancestor, Jean-Louis Boisson married Elisabeth Chambellan and so became vine-growers in Chauteauneuf du Pape. Since then, many parcels have remained in the family, and the vines there are now are over 100 years old and produce outstanding wine. The oldest parcel was planted in 1906. As a tribute and thanks to Elisabeth, we are today vine-growers from father to son and daughter.
