Pale gold with crystalline flecks. Closed nose, with mineral notes of gunflint and iodine. The palate is fresh with a mineral-dominated iodine attack. The impression of structure and
depth is crowned by a fresh, citrusy sensation. The lingering crystalline finish is intense,
concluding on a beautiful minerality.
From the oldest Sauvignon Blanc parcel on the estate, this limited cuvée is aged in
12hl amphorae for 18 months. The slow action over a long period of time and the
meticulous ageing in stoneware amphorae reveal the soft depth, minerality and saline
notes of the kimmeridgian limestone.

About the Estate
Domaine Chavet has existed in Menetou-Salon since the 17th century. The ancestral
vineyards, handed down from generation to generation, are cultivated with the greatest
respect for the vine and its environment. These winegrowers do not inherit their vineyard, they believe they are guardians of it for future generations.
