This is not your everyday Sauvignon Blanc. It’s from a single vineyard in Menetou-Salon, full of smoky tropical charm. This rich, late-harvest Sauvignon Blanc is calling for creamy pastas, seafood risotto, or just a good recline on the couch.
Tasting Notes: Pale gold in the glass, this wine opens with generous aromas of candied apricot, mango, and roasted pineapple, lifted by a hint of smoky minerality. On the palate, it’s full-bodied and round, with a rich texture and a lively streak of freshness that keeps things balanced. The grapes are picked slightly later than the rest of the harvest, giving this Sauvignon Blanc extra ripeness and depth. The finish is smooth, vibrant, and lingers just long enough to make you want another sip.
From a single 2.8 hectare plot of Kimmeridgian clay-limestone packed with small fossilized oysters. Short pre-fermentation cold maceration followed by light (low pressure) pressing. Vinification regulated by temperature control with regular aeration. Aged on fine lees for 6 months with daily tasting and resuspension of the lees for 2/3 of the cuvée. Aged in Centre-Loire oak barrels for 1/3 of the cuvée.

About the Estate: Domaine Chavet has existed in Menetou-Salon since the 17th century. The ancestral vineyards, handed down from generation to generation, are cultivated with the greatest respect for the vine and its environment. These winegrowers do not inherit their vineyard, they believe they are guardians of it for future generations.
