This is not your weeknight Pinot. This is your “we lit the candles and set the table” Pinot, for nights when you’re serving pork chops, pan-seared salmon, or whatever you made with real effort and no backup plan.
Tasting Notes: This Premier Cru Pinot Noir shows a medium-plus ruby color and a vibrant nose of dark cherry, violets, and a hint of earth. The palate is fresh and juicy, with concentrated red fruit that lifts through the mid-palate before finishing with a subtle note of strawberry. There’s a graceful intensity to the wine, with a gentle increase in flavor and texture that makes each sip feel more rewarding than the last. Perfect with veal, pork, roasted poultry, or salmon.
Varietals: 100% Pinot Noir
About the Estate: Founded in the late 1960s, Domaine Olivier began when Hervé Olivier inherited a handful of vineyards from his grandfather, Antoine Chevalier Moreau. Over the decades, the family expanded their holdings across Santenay, Savigny-lès-Beaune, Pommard, and Nuits-Saint-Georges, with a particular passion for reviving historic white wine terroirs in Santenay that had long been neglected. Today, Antoine and Rachel Olivier lead the domaine with a focus on sustainable farming, traditional winemaking, and expressing the purity of Burgundy’s soils through thoughtful, terroir-driven wines.
